Shortly a year after opening, Milanese restaurant Horto and its Executive Chef Alberto Toè have been awarded the prestigious Michelin Star and Green Star for sustainability, confirming their commitment to offering a unique gastronomic experience in the name of sustainable ethics.

The fine dining restaurant was born on the rooftop of the renovated The Medelan building in central Milan to offer a moment of escape in the heart of the city. The Ethical Hour – as explained by co-founders Osvaldo Bosetti and Diego Panizza – is the philosophy that moves the project and redefines the relationship with time by enhancing the short supply chain’s local richness and the seasonal products of the territories in proximity. From the kitchen to the interiors, the landscape design and the choice of its partners, Horto follows a direction of experimentation, innovation and sustainability.

Known for his sustainable philosophy and attention to the seasonality of raw materials, chef Norbert Niederkofler is in charge of Horto’s culinary strategy. Executive Chef Alberto Toè masterfully interprets this vision, guiding the restaurant and Horto’s young brigade since its opening.

“This is an important recognition not only for the work we have done, but also for the hidden richness of our territory,” Chef Toè said. “It proves that it is possible to make haute cuisine while respecting nature and its times, and it is the commitment to which the entire Horto team has always been dedicated. It is a moment of great pride and a sign of confidence for the future.”

A 100% no-waste cuisine in which tradition and innovation, Italian and international inspiration, simplicity and complexity are blended. Among Horto’s most representative dishes: ‘Cow’s milk curd, Varzese beef carpaccio and sturgeon caviar’, ‘Plin of strachitunt, saffron and yeast’ and ‘Risotto with wild herbs, wild flowers and kefir’.

“We are proud of these two important awards. From the beginning, we wanted to create a place where gastronomic excellence and sustainable ethics meet harmoniously,” co-founders Bosetti and Panizza said. “This recognition confirms our commitment to redefining the concept of dining, and we are extremely happy to share this achievement with our team and guests. Horto is more than a restaurant, it is an experience that celebrates the beauty of the territory and the value of ethics in the kitchen.”
